Watermelon & Feta Salad
Summer is the season for Rosé and (not to toot our own trumpet) our CRU Heretaunga Rosé of Syrah is pretty darn delicious.
So while you're busy stocking up on this beautiful, dry Rosé here, we thought we'd share a delicious summer salad recipe that is a heavenly match with our Rosé.
Watermelon and Feta Salad
500g fresh watermelon, diced
150g goats feta, crumbled
50g walnuts, roughly chopped (could swap for almond slithers)
200g Rocket or mixed baby salad leaves
Handful of fresh mint, chopped
3 tbsp red wine vinegar
Cracked black pepper to taste
Place all ingredients in a large bowl, toss gently to combine.
Allow to rest to let the flavours mingle for about 10 minutes before serving (totally fine to sit in the refrigerator for a few hours too!)
Serve with your choice of protein, we highly recommend Cajun spiced prawns on the BBQ.
